No inconvenience caused at all. It is working now! Thank you. 

I re-installed the game, re-downloaded the patch, logged in, and saw that I can change the server on the login screen. Upon logging in, I can see my account on the Global server. I can also see the ability to change the server from the settings screen as well. 

Any insight as to what happened here so others can troubleshoot if they run into the same problem?

If you don't already have such a program in place, perhaps a 'bug bounty' would be fun to have for your dedicated fanbase/players. I'm sure it will encourage players to report more issues and in greater detail. The type of bug could be proportional to the in-game reward/bonus (assuming it's a validated issue).

The only reason I went into detail with screenshots to post this is that I was hoping some other player had already found and reported it. But Stove/Google/Reddit didn't turn up any results and I didn't want to wait any longer.

hello m1 mac user here. I too cannot find epic seven in the app store for an m1 mac. any help will be greatly appreciated. i look forward to playing the game on my mac!
